Brew size:
21 L in 375 ml bottles
Grains:
500 g Dark Crystal
250 g Chocolate
250 g Black
Hops:
30 g Willamette flowers - 90 mins boil
35 g Willamette flowers - 60 mins boil
60 g Styrian Goldings flowers - 30 mins boil
Yeast:
Safale S-04 (from OB)
Extracts:
2.5 kg LDME
Adjuncts:
~700 g black treacle syrup
13 g ground coriander at flame out
0.5 tsp freshly ground black pepper at flame out
Brewing Time:
1 week primary fermentation
2 weeks secondary fermentation
Temperatures:
Yeast pitched at 25 C
Primary fermentation 20-34 C, averaging mid to high
20s
Secondary fermentation 15-29 C, averaging around 20 C -
relatively cool for recent months
Approximate ABV:
6%
Notes:
Our first attempt at using whole hop cones in the boil. We
also purchased a hop sock, which made the whole process much
easier. The grains were steeped in hot water for most of the
boil time before the hot wort was used to sparge the grains.
Inky black and very bitter wort - this is going to be a BIG
beer!
Tasting at racking it was still a bit sweet, but the spiciness and dark malts are doing a great job at competing with the strong hop character. Should be a good beer after maturation. Gravity still quite high (1024).
Gravity dropped to 1020 for bottling after 2 weeks secondary fermentation. Primed with 115 g sugar for "low-mid" carbonation, and put into stubbies.
8 weeks after bottling, this has matured into a very nice dark spicy bitter stout. Would definitely make this again!
